Going Gluten-Free Just Got Easier
In 2002, my 31-year-old husband, a Type I diabetic, was diagnosed with celiac disease, also known as gluten intolerance. It’s very common for Type I diabetics to also become celiac, because both are autoimmune diseases, so we weren’t completely surprised. But of course we were quite dismayed. How were we going to cook our favorite dishes? How were we ever going to eat out again? Would my husband be forever prohibited from eating pizza, pancakes, and pasta?
Fortunately, I was already a regular visitor to health-food stores due to my own sodium-restricted diet. And Whole Foods was already a presence, albeit a much less ubiquitous one than it is today. So I knew that we had options—they were just a bit harder to come by, a bit more expensive, and a bit less palatable than their mainstream gluten versions. We could still have the pizza, pancakes, and pasta, and if they weren’t quite as satisfying as they were before, they were still better than nothing.
Nearly 10 years later, how things have changed! The gluten-free (GF) concept has really caught on with the restaurant and food manufacturing industries. A few days ago, Patch reported that the California Pizza Kitchen chain was introducing a GF crust option on 29 of its pizza offerings. I say, what took them so long? We’ve been ordering GF pizza for a while now from local restaurants including Calabria in Livingston and our own Village Trattoria in South Orange. Before that, we figured out how to make it at home with a prepackaged brown rice pizza crust from Nature’s Hilights. We still do occasionally when I can get to Whole Foods to buy the pizza crust; Eden Gourmet Market seems to have stopped carrying it.
