Healthy eating 101: local cooking class helps mothers to fix nutritious treats
Every night at the dinner table, Amanda Cobb faced with a dilemma three years named Kaydence.
When it comes to picky eaters, Kaydence is one of the most persistent.
"If she had her way, she was eating ice cream every day," Cobb, 26, said.
One of the few concessions to his daughter that eating healthy is broccoli, and even then it must be smothered with cheese. While Cobb is the search for new weapons in its arsenal healthier cooking - things that can provide valuable nutrients, but will still pass the test of a young child a taste ruthless.
It also seeks to itself.
"I recently had a brief argument with the scale," said Cobb. "So healthy food is the new goal."
It's the hunt led her to a monthly cooking class led by women in the district of Abilene-Taylor County Public Health, infants and children program. The class focuses on live cooking demonstrations, but also features videos, guides printed recipe and tips for dining.
The lessons serve as proof that eating well is not impossible, even with budget constraints and time than most mothers face.Cook something from scratch is often a healthier alternative to eating out or cooking packaged foods, as these tend to be loaded with unhealthy preservatives.
"We want to move customers away from Hamburger Helper or something in the microwave zapping," said Natalie Arnold, a nutritionist with the WIC program. "We want them to see (what they eat) a little more."
WIC works with mothers who are pregnant or have young children to improve eating habits at home. Other classes under the program include the lessons of breastfeeding, nutrition for infants and food to eat during pregnancy.Women participating in the program to fall below certain income standards, depending on the size of their household.
During cooking of August, the focus was on the use of fruit in some unconventional means: Fisheries as a marinade for pork, apple slices in wraps tuna and strawberries to spice up a spinach salad.
